Sparkle N Shine Holiday 2016 Bonbon Collection
This holiday’s collection is one of my favorites! Colors trending for this holiday are gold, black and white. I wanted to use these in a bold and bright way. I’m a long time admirer of the Russian artist Erté (1892-1990). His art and style are the foundation of Art Deco design. Among so many other things, he designed costumes for the Folies-Bergère, the Ziegfeld Follies and the Latin Quarter. *A piece of useless trivia- Barbara Walters’ father owned the Latin Quarter and she has a lot of Erté’s original drawings for costumes at the club with not much more than “for the redhead in the front” written on the back.
I’ve put in traditional flavors like rum spiked eggnog and gingerbread. As a nod to National Root Vegetable month, I have included the most beautiful bonbon we make, Sweet Beet. A blend of beet puree, orange peel infusion and Grand Marnier. There are new bonbons like vanilla bean ganache with Pear Williams pâté de fruit and serrano chile infused ganache with tart red currant pâté de fruit. Our caramel for this collection is Angry Orchard apple ginger hard cider to tie in with our newest pairing event, hard cider from local cidery Julian Ciderworks with our holiday chocolates. Yum!
