“Gilded” Easter Egg Bonbon Collection
I love designing our Easter egg collections! After Christmas and Valentine’s day, feeling morally obligated to use the color red if at all possible, I enjoy the freedom of Easter. The use of color in a bright cheerful way. In any way I choose.
I love the beach glass/ sea grass watery colors here that feel fresh and breezy. Grassy sea foam greens, pale icy blues playing off each other in a beautifully harmonious way. The gold dipped ends add a lush elegance to the collection. Our version? Well we “dipped” ours in 24K luster dust and they just came alive!
Let’s talk about flavors for a moment. I always try to be conscious of who the receiving party may be when I begin thinking about flavors. As Easter Egg bonbons are quite likely to fall into the baskets of younger chocolate lovers, I don’t use any alcohol for Easter collections.
This year our flavors include a fruity blueberry caramel enrobed in 72% dark, a nice play of sweetness and rich bitterness. Also, a passion fruit banana ganache with toasted hazelnut praline enrobed in 64% dark. A “Salt & Pepper” combo of our own salted caramel and a black pepper 64% dark chocolate ganache enrobed in 64% dark. “Peaches & Cream” a smooth creamy vanilla ganache paired with fresh peach pâté de fruit enrobed in 33% milk. Rounding these out, “Cinnamon Swirl” a vanilla bean ganache with a ribbon of cinnamon brown sugar throughout.
The result? Well, I believe these “gilded” eggs and the perfect California beachy vibe meets the golden goose. Elegant, fresh and everything Easter.
